Ingredients
- Mushrooms (white or cremini)
- 1 bulb Shallot
- 2 cloves of garlic
- 1 cup spinach
- 8 oz cream cheese
- 1/2 cup panko
- 5 tbsp melted butter
- 1/3 cup grated parmesan
- Oil

Preparation
- Preheat oven to 375 F
- Remove mushroom stems and set aside
- Place mushrooms open-side up on baking sheet
- Finely chop mushroom stems
- Dice shallot and garlic cloves
- Finely chop spinach
- Add oil, shallots, garlic, mushroom stems, and spinach into a pan and saute for 3 mins
- Add saute mixture in a bowl with cream cheese and mix
- Fill mushroom tops with the mixture
- In separate bowl, mix panko, butter and parmesan together and top on mushrooms
- Cook in oven for 20 mins
