Ingredients

  • Vegetables of your choosing (i.e carrots, potatoes, brocolli, brussel sprouts, etc)
  • Seasonings (salt, pepper, etc)
  • Oil (liquid or spray)

  • Oven
  • Baking tray

Preparation

  • Pre-heat oven to 450F
  • Wash vegetables
  • Prep vegetables for cooking, cutting them to desired size (I usually do 1cm strips for carrots and potatoes, and halve brocolli heads or brussels)
  • If vegetable is a starch, soak and dry in water before proceeding to next step
  • Line baking tray and place prepped vegetables on tray
  • Cook times:
    • Carrots: 425 F 18 - 20 mins
    • Potatoes: 450 F 15 - 20 mins, flip, 5 - 10 mins
