Ingredients
- Vegetables of your choosing (i.e carrots, potatoes, brocolli, brussel sprouts, etc)
- Seasonings (salt, pepper, etc)
- Oil (liquid or spray)

- Baking tray
Preparation
- Pre-heat oven to 450F
- Wash vegetables
- Prep vegetables for cooking, cutting them to desired size (I usually do 1cm strips for carrots and potatoes, and halve brocolli heads or brussels)
- If vegetable is a starch, soak and dry in water before proceeding to next step
- Line baking tray and place prepped vegetables on tray
- Cook times:
- Carrots: 425 F 18 - 20 mins
- Potatoes: 450 F 15 - 20 mins, flip, 5 - 10 mins
